Not far from the roar of a football crowd at Georgia Tech, this little pizza empire has quickly become one of Atlanta’s newest hot spots. The line out front makes you think that it has been discovered and overrun but the hordes that wait outside are quick to tell you to be of good cheer, the line moves fast and the pizza volcano’s erupt pizzas even faster. Thats right, volcano ovens can get a pizza from the dough ball to the table in under 5 minutes. You have the option of bringing your own wine or choosing from their wine and beer selection. Serpentine walls with wide glass windows lead you down the path with the scent of basil and pepperoni heavy in the air. Smiling patrons pass each other with a look of wonder on their faces from their encounters with the fire breathing volcano lined kitchen.
Thats right, you sit in the middle of the kitchen, or around the fridge or in the warming area or out in the cavernous factory floor. Where ever you choose, you sit at long wooden tables, elbow to elbow with people that are some of the happiest folks you will ever meet. Somehow the spirit of Florence has been transmitted into the room. The pizza comes out at NASCAR speed and is ushered onto the table atop parchment covered jelly roll pans. When we were there we had familes from Chicago and Philadelphia on either side and both proclaimed that it was some of the best pizza they had ever tasted. Fresh herbs sit in pickle jars above the flour tables and the chefs pull them straight onto the pastry surface to coat with their house marinara.
It’s a must try when in Atlanta.
